Monastier Distillery
In the completely revamped distillery of Monastier, the distillation method is a continuous steam cycle. The pomace is placed in an dealcolizer through which vapor passes for the extraction of the alcoholic content. This flows to the distillation column where, just as in the discontinuous method, the concentration and separation of the heart from the “head” and the “tail” takes place, then passes on to the rectification and condensation phases. In this plant environmental aspects are apparent. After the distillation the pomace from both distilleries is dried and the seeds are separated from the peels. The peels are used as an additive for vegitable animal feed, the seeds for the production of grape seed oil.
